Funky Beans
(Video 9:58) All the Beautiful, Useful Bean Things.
Funky beans, and using beans in miso and other fermented preparations, is a great way to leverage our local bounty. For example these beautiful black soybeans that a friend of mine grew. Another beautiful crop, very prolific.
We can leverage that bounty and turn those black soybeans into something like this. These are wonderful funky soybean discs that I have seasoned. They are essentially bouillon cubes. For me that means an easy and delicious meal on the table.
Next, show and tell.
Welcome to my very crowded kitchen counter. Here is some fresh natto that I made last week. This is wild-type natto, with lots of the stringiness that natto is famous for.
