Fresh or dried mint twigs and stems, especially when they’re tender or only lightly woody, have many practical uses beyond being tossed in the Bokashi. Actually, some of the thicker stems are sometimes better than the thinner ones when grilling or smoking something. Unless you are stripping the stems, you'll usually have some leaves left on them anyway. If you are concerned about color, they can, like the leaves, darken things.
