“Hi everybody. So I am going to talk about using dehydration and reducing water activity for fermentation, sort of going the opposite way of sink everything in brine and all will be fine, which is true. You want to keep things anaerobic. However, throughout history, people have figured out for various reasons that using dehydration and removing some of that water has some wonderful benefits. I am gonna talk to you a bit and then I will show you things.”
